Other than the obvious of having 4 more ports to use, is there any difference in the two wiring solutions? (http://www.hollowellservices.com/dual_6x8.pdf)
That is to say if i had two 6x8 available and no power passing splitters would the second example be the way to go?
I guess another question would be is, are both of these solutions wired correctly? I have been told before that the 4 lines from the first 6x8 have to come from ports 3,4,5 and 6, then someone else told me that is doesn't matter what ports they come from.

The first picture the parallel setup is correct.
The second picture (cascading) you do not want to do with two Zinwell WB68 multi-switches because they are non powered multi-switches. You will have problems with that setup.
i suggest buying 4 wideband splitters rather than cascade

As Bmore has mentioned, cascading is not the ideal way to go. Many here have posted that they have the configuration this way, but it is not recommended. I'd spring for the power passing splitters.
As far as the ports 3-4-5-6, if I understand correctly what you are asking, then it doesn't matter which ports you use from the 1st switch to the 2nd. I think for simplicity reasons of keeping track of the connections it would be easier to just use the 1-2-3-4 outputs from the 1st to the inputs of the 2nd.
But again, use power passing splitters or get yourself a WB616 which is a 16 output powered multi-switch.
