Okay, first I have to admit that I have only had my 721 for a few weeks now, so I may not be "seeing" this right, but it sure looks like a bug to me. I checked it with a 721 veteran and he is seeing the same thing. I have SW version L1.09.
I missed the last few minutes of an NBA game, so I went in to all my NBA related timers and added extra minutes at the end to prevent further issues. It looks like the time to record past the end of event is truly edited correctly, but it does not display correctly. I edited it to 99 minutes, but it shows 0 minutes when I went back in to the timer to confirm that the edit "took." From what I can tell, the minutes you edit are additive. After I put in 99 and it showed 0, I put in 10, and it still showed 0, but the true stop time (in the set time area) was 109 minutes after the end of event.
Scott G, does this issue show up in SW ver 1.10 ?
