Signal Streingth?

I've just installed a new DTV system with the triple LNB dish

I live in JAX FL and I'm getting locaks off of 119.

This is my signal readings with a clear sky.

101 = 87 - 92
110 = 78 - 85
119 = 42 - 50

Is this normal?

You should 70% or beter on all 3 satellites. You probably have something obstructing your line of sight on 119. 101 and 110 are OK.

Check to make sure your mounting pole is ABSOLUTELY plumb... aiming that big oval dish is a pain, and the signal meters on the ird's are a bit slow in responding... make slow moves with the dish.

Which transponder are we supposed to look at when testing signal strength?

There isn't a single transponder to look at to test signal strength. Rather you should scroll through ALL transponders, minus spotbeams you don't get, and check them to ensure you're getting signal. Anything 75+ on a clear day should be sufficient.
