Not everything on HBO is in 5.1. Right now, Bob Costas is on channel 300 and that is not a 5.1 program. HBO sends out a 5.1 stream for movies that have a 5.1 soundtrack.

Anytime a show is in DD, only the front speakers will work. Your center speaker is your main one where you will hear most of your talking from. DD is left to right, front to back. The back speakers will have sound if something makes sound behind the camera or if like a car comes at the camera and then disappears behind the camera. On my DVD player, there are some movies where the back speakers won't do anything throughout the movie.
You could put your receiver in ProLogic II mode if you want simulated 5.1 sound when there is only 2 channel stereo.
Just one other thought. You'll have to go into the menu of your sat receiver and change it to output DD if you haven't already.

DD is self setting. You're unit may not display it, mine happens to. When I have a DD signal coming in, my unit displays 2.0 for say a DVD setup screen, or something like Sportscenter, that's not broadcast in surround.
Once the signal being sent to the receiver is sending surround sound, the receiver immediately changes to 5.1 or 3/2.1 depending how your receiver might display it. 3/2 simply means front/rear. the .1 refers to a sub channel.
For shows with a live audience, many are now in 5.1, so you hear the host normally in the center, with the guest, any music from the sides, and the audience from the rear, to simulate you being in the front row :)
For movies, your receiver will automatically be in 5.1 once the movie starts. That's part of how the DD chips work.
