Should both the s-video cable and the componet video cables be hooked up at the same time?

Just one or the other.
You will need to have some sort of audio cable hooked up as well.

They can be, but they don't have to be. I have both of mine hooked up.

On the 6000, I have both of mine hooked up. The reason I've done this is because my television display locks in digital TV mode and I don't like the display for SD channels (can't change the aspect ratio, etc). To watch SD, I switch the 6000 to SD and change the input on my television to the svideo connection plugged into 6000. In this configuration I do have to split my audio coming out of the 6000 into my television for both the HD and svideo input.
