Just bought a Trek 5x8 Multiswitch - to replace a 4 tv multiswitch - but it has 2 input options 13v and 18v - which set do I use for Directv??

What dish do you have now? Since you bought a 5x8, I assume that it is an oval with integrated multiswitch or is it an older version? In any case you have to use both 13v and 18v inputs, and the 22kHz inputs as well. If you have the oval with integrated multiswitch, connect all four outputs from the dish to the 5x8.
Oh Yeah, Did you get the multiswitch from Captain Kirk or Mr. Spock? :D

It's a round dish - maybe 1 year old...

That switch will work for your round dish. It does have a dual LNB, right? Just connect the two outputs from the dish to the 13v/0kHz and 18v/0Khz inputs. The 22kHz inputs can be left unused until when you get the oval dish. Just to help you understand how the LNB and multiswitch work, the two voltages control which polarity the LNB should use. The receiver sends this voltage. The multiswitch locks in each LNB to one polarity or the other. The multiswitch now does the selection based on the voltage from the receiver. The 22kHz signal is used to select which satellite is to be used with an oval dish. I hope I didn't bore you.:)
