If I want to share a dish receiver with 3 tv's, can the output coax that is run to another room be split with a normal coax splitter. I would have my s-video/rca feed the main tv, and the coax output feed 2 additional tvs. Any help would be greatly appreciated.

Yes. I have split the output from a 501, 510 and 921.

Yes, that's exactly what I do except I have 2 receivers that can be accessed by all 3 TV's in my home. My main satellite receivers rf output goes to a channel 4 signal combiner (if you use channel 3, use a channel 3 signal combiner instead), and then goes to a 4 way RS distribution amp (a 3 way splitter will work also but a distribution amp works better), the distribution amps outputs then go to each of my 3 TV's and a VCR (I also use A/V connections to my sound system receiver and then connected it to main TV via A/V connections. When distributing a satellite receiver to multiple TV's by rf, it is best to use a channel 3 or 4 signal combiner, these devices can be purchased at your local RS or a satellite dealer for about $20 or less and allow's you to simply select channel 3 or 4 when you desire to watch satellite on a remote TV without worrying about the TV/Satellite button on your remote and will keep the signal from the satellite receiver from interfering with adjacent TV channels (for example, in my area we have a local channel 3, so I selected to use channel 4 for my satellite receiver, with the combiner it does not over power channel 3, with out a combiner it will). With my 2nd satellite receiver I run its rf output directly to TV2 and I run the A/V out to the A/V out to my VCR, the A/V out of the VCR goes to the A/V In of my Sound system connected to main TV and the VCR rf out goes directly to TV3.
I can receive satellite receiver 1 on all 3 of my TV's and my VCR by selecting channel 4, I can also receive satellite 1 on my main TV on Video 1 setting on both TV and sound receiver and on VCR Video 1(my preferred method for stereo sound and better pq). I can receive satellite receiver 2 on main TV by Video 1 with Video 2 on sound receiver and Video 2 on VCR. Satellite receiver 2 can be selected on TV 2 by channel 4 also but with it I also need to use the TV/satellite button on remote. To select satellite receiver 2 on TV 3, also select channel 4, but I have to use the TV/VCR button on the VCR and I also use pyramids to use ir remotes in remote locations.
In any situation where both channel 3 and 4 are being used, you may want to consider purchasing a uhf modulator and connecting to it by A/V cables, to select a satellite receiver on remote TV's by using an unused uhf channel. Cheap UHF modulators used to be available for $30 - $40, however lately I have not seen any for less then $100 and if you want MTS stereo sound on your remote TV's these modulators will run about $400.
