I have a Dish 500 system. It is installed properly, I am receiving good signal from both satellites, my switch box is installed "properly", .... however, I receive my best signal from two specific transponders. Satellite 110 holds its transponder like it is supposed to, however, satellite 119 works best on transponder 21 yet, as soon as I leave the setup menu it reverts back to transponder 01...where I receive NO satellite signal. Why is this happening and how can I fix this problem, it is wrecking havoc on my tv viewing! thanks

Welcome aboard! :)
I think you misunderstand how satellite TV works.
You pick a channel to watch and the receiver looks up which satellite, transponder, and stream that channel is in, then tunes to it.
The transponder you pick in Point Dish means nothing once you leave that screen.
Normally, tp's 11 & 12 are used to check your dish aim. Other transponders may or may not exist, or may be on spotbeams where signal strength varies wildly depending on your location. If you've got around 100 on both birds, tp 11 & 12, you're fine so far as satellite reception is concerned. Of course, I'm assuming that you have ONLY a Dish 500 and no third bird - which could very well be incorrect because you say you have a switch, and it's pretty rare to have an external switch on a 2 bird setup.
Once we've confirmed the above - that you're receiving odd & even transponders on both birds - then we'll need details regarding whatever problem you're having. For example, always post your receiver models, LNBF and switch types, etc.
