What I have:
(1) Dish 500, Direct Connect to DP-Twin-1 (from system setup screen)
(2) Look at 110 and 119 birds
(3) Dish 508 - single cable coming in from outside into first floor of house
(4) Dish 301 - single cable coming in from outside into second floor of house
What I want:
(1) 921 in place of 508
(2) Move 508 up to 301 location (maintain only two boxes)
What do I need to do/order (besides the 921) to make my setup work?

Lots of ways to go. Costs and ease of installation will vary. Swap out the Twin for a Quad to get the third feed you need. This also leaves an unused feed in case you want to keep the 301 running. You will have to run second cable to 921. Add a DP34 attached to the Twin. Same comments as above, except you will also have an unused switch INPUT for a 3rd bird if needed. Add a DPP44. Same comments as above except TWO unused switch inputs, and if you want, you can avoid running second cable to 921 by using a DPP Separator. That also leaves you TWO unused outputs for future use. Add a DPPlus Twin (not yet available). This has a mix of above features. One unused input for 3rd bird. No second cable for 921 - you'd HAVE to use the DPP Separator. Then the 2nd output of the Twin goes to the 508 - no other expansion possible.
Thanks for the info. Just so that I understand, do installers carry the various switches, etc., on their truck so that they can diagnose what needs to be done and then install it same-day? Can I make a request of how install is done (yes, I'm willing to pay extra)? Will they do what I ask?

Some installers will have extra parts - depends on the company.
Some installers will take requests - depends on the company.
Some installers will do what you want - depends on the company.
My outfit does NOT carry extra stuff, but we ARE willing to hook up what you want at a fair price. We can usually get whatever's needed in 24-48 hours.
Any GOOD installer is going to call you in advance to confirm what's needed. I'll even go do a pre-install survey if it's not too far out of my way. But we are NOT a hack fulfilment outfit - we're a full-service digital electronics company (satellite, computers, etc.).
Order through DISH Network and they will send out DNSC to do your install for the $549 they will provide whatever switches are needed.
Not that I cannot call Dish to find out, but do you know what they charge for install of 921?

Dish currently has a special going where you purchase the 921 from them for $549 directly and the cost includes the installation, don't think it gets much better than that.
