Does anyone have an idea whether being a Dish customer with two Dish 500 Sats and an SW64 (leaving one LNBF open) whether I can leverage that open connection to get a DirecTV signal if I spring for a receiver?

You can use your Dish 500 dish with a DirecTV receiver but the SW64 will not work. Check out this web page for wiring ideas.

Since you are in NY, you probably are pointing at 61.5 with that dish. The unused connection would not come close to receiving 101. So, the answer is no.
