Signal strength as follows:
101 = mid 90's
110 = mid 90's
119 = high 60's
Is this good enough for HD? 119 might be touching tops of tree.

I have a 5lnb slimline dish and a new accutrac22 pro meter. How do I connect the meter to the lnb's to read 119?

Your 119 readings are a bit low. Is it trees, or an alignment issue? Tweak the dish's "tilt" adjustment to see if that improves the 119 readings without dropping the 101/110 readings. And don't forget to check your Ka-band (99 & 103-deg satellite) readings, since those are the toughest to maximize.
You need to connect two jumpers from the dish/multiswitch to the meter. Then the top graph is 119 and the bottom is 101. With only one jumper you only get 101, no matter how you have it connected.

You only need one connection, but it has to be the top connector (LNB1). Then you have to either...
(a) set your receiver to a channel that comes from 110 or 119, or
(b) set the meter to send the 22KHz tone - which you do through the menus.
If you are also connected to your receiver, then setting it to channel 492 or 493 will get you 119. If you see the "Sat B Odd 13V" or "Sat B Even 18V" display on your screen, you know you are in fact on 119.
