How much of a degradation in signal am I likely to experience by using RG59 coax from the wall to UTV, vs an RG6 coax?

It can vary from no apparent degradation to total loss of signal
lock, depending on the length and characteristics of the RG59
cable run. You can only find out for sure by experimenting.

A good quality RG6 will almost certainly work. The expense of
RG11 may be warranted for especially long cable runs. If there
is any likelihood of ever using the cable with DISHpro or other
"stacked" signals in the future, make sure it is sweep certified
to carry frequencies of over 2 GHz.

I have one RG59 (original construction) and one RG6 (new install) to each of my two UTV units, and have had no problems. All of those lines are fed directly from my multi-switch. The lines coming from the dish itself are both RG6.
