Just got around to watching week 6. If that 21 game in the immunity challenge was as simple as they explained it, then both sides kept mis-playing up until Chuay-Gahn's last move.
I thought Chuay-Gahn understood the game based on their pre-game strategy session. If you can make it the other team's move with 4 flags left you win. But they didn't figure out that the strategy just goes backward from there in increments of 4. You win if it's the other team's turn with 8, 12, 16, or 20 flags. (If they take 1 you take 3; if they take 2 you take 2; if they take 3 you take 1.)
So since the game started with 21 flags whoever went first had a forced win, starting with taking 1 flag.
