What is the difference? Which is better? Which is more compatible with DVD players?

Most DVD players today will handle either format. Older Panasonic players and recorders only handled DVD-R. Older Sanyo units handled only DVD+R (I have one of each). AS to which is better -- you pays your money and takes your choice. :grin:
I'm not aware of any significant difference in quality between the two.

Don't know about any difference between DVD +R and -R but with DVD RW, the +R's allow you to edit a recording that was made in regular video format; the RW -R's don't allow editting unless you use a special format that doesn't play on many DVD players.
At least that's how they work on my Sony DVD Recorder.

Now a days all burners should be +R/-R/+RW/-RW and dual layer. I have an HP 8X + burner, my buddy has a - burner neither of us have an compatibility issues.
