What is the difference between the two. I have been told that the 600 does not support special packages like the NFL or NASCAR. Is this the truth or am I getting a snow job to buy the 700 series

You're being confused:
There is an H20-600 and and HR20-700. The "H" is an HD receiver, the "HR" is an HD DVR receiver." NOT the same thing at all.

the HR20-700 and HR20-100 (DVR's) are functionally identical.
The H20/H21 and HR20 DIRECTV Plus series receivers and DVR's are MPEG4 capable and also capable of NFL-ST packages.
The TiVo based HR10-250 is MPEG2 capable only and will not support the new channels being launched by DIRECTV.
I don't know what you are refering to with HR600 or HR700. These are not valid DIRECTV models.

Bottom line, you can get the special features with any DIRECTV HD-capable receiver.

Both HR20-700 and HR20-100 have OTA tuners. That's not the difference.

As far as I know all DIRECTV receivers can get the NFL ST package. Not all of the receivers will support HD, though.
There is no receiver called HD600 - using that terminology will only confuse people.
Presumably you are talking about the H20-600
If you want to record (a DVR), then you will need either an HR20-700 or an HR20-100 model.
If you don't need or want to record, then a standard receiver can be used. Those model are H20-100 and H20-600.
Both of those will give you HD, there are other types of receivers that are Standard Definition only (both recorders and non-recorders).

Sorry, both the HR20-700 and HR20-100 DVR's have dual OTA tuners.
The (yet to be released) H21 HD receiver does not have an OTA tuner (as opposed the the H20 HD receiver which does).

Thanks to all who replied - I am a newbie to all of this. I purchased a H20 HD HDTV-MPEG4 receiver. All I want to know is this receiver capable of receiving and playing in HD the NFL Sunday package.

Yes, the H20 HD receiver will receive NFL ST this year and more importantly, the next several years as well.
It will also support all the new HD channels that will be launched anon.

One final question regarding this receiver. I was told that this receiver is not capable of Interactivity (additional functionality for customers subscribing to NFL Sunday Ticket). What does this mean? Again any assistance would be appreciated.

Interactive features on NFL ST include live scores displayed on the screen over the present game, Fantasy player trackers, alerts, and game stats.
The H20 should support most of the interactive features and will get better as new software is released.
