Thank you! I feel ever so much better now. The beginnings of an identity crisis have been squelched. Perhaps an e-mail to the proprietors of the Civil Rights for Appalachian-Americans website is in order, so that we southwestern Virginians can be included in their affinity group. Might as well throw in western NC and northwest Georgia for good measure.

Yes, that's what I was referencing in post #8. That was Jack McDavid. It was a great early Food Network show, with the competitive, Iron Chef type theme going. They had a different outdoor "cookout" location every show.

McDavid, who had some difficulty with spoken English to begin with, I think sealed his fate with the Food Network when he made a "live" appearance on another show in what appeared to be an inebriated condition.

At the moment, it's 4 "black eggs" here. Makes doing an 8 roast carton of pork butts a one day project. Even though I was born in Virginia, pulled pork is done "Eastern North Carolina" style: dry with vinegar and cracked red pepper.

Alton does an excellent job explaining the "technology", if you will, behind many food issues in a creative way. Did you happen to catch the show where he explained the chemical nature of all the different types of oils with the miniature train car set? Very effective.

Ditto here in Eastern NW Ga, although some of the places have both Eastern and Western NC styles. The best in GA is Zeb Dean's located in Danielsville, a few miles from Athens, the heart of the Bulldog Nation, which is the ENC style.

I went to Jack McDavid's restaurant, "Down Home Diner" in Reading Terminal Market in Philadelphia years ago. We walked in and were seated by a waitress. I ordered the pulled pork, which was to die for. Soon after we got our food, Jack himself rushes into the restaurant, takes off his jacket and starts helping out! He came over to our table, takes a look at my plate and quickly says "dijew git yer butter beans?" I did not. Seconds later he comes back with them and asks if we needed anything else.

Best damn butter beans I've ever tasted! :D

The guy is the antithesis of Bobby Flay. He's about as real as it gets. The right guy got the TV career, though. Jack's food should be tasted, not wasted! :D

I really like Alton Brown's program Good Eats for the scientific explanations of way food are prepared the way they are.

    Never enjoyed Emeril that much

My favority however is Giada De Laurentis:

They had to cancel Emeril - He was getting so fat that he was in "Stretch-o-vision" even when he was on HD.

Emeril doesn't look real healthy lately. I wonder if he's stepping back a bit. I also wish he wouldn't put his name on some of the crud he has recently. He's a very good chef who came out of what may be the finest restaurant (certainly top 10) in the United States - Commander's Palace in New Orleans.
Watching Gordon Ramsay cook on BBCA is also a pleasure.
    Rachel Ray...ehh.

Just as an FYI, the Food Network is often described as the "house that Emeril built." They started as a cable access show out of Central Islip, Long Island, NY back in the 70's, grew with PBS re-runs of Julia Child's cooking shows, a few "local Long Island celebrities", so on and so forth.

I remember them originally as the Food Channel. Emeril really was one of their first real star chefs and back in the late 90's they changed directions to show the "everyday suburban housewife cook" could be a chef! Emeril's down home style helped them with that. You betta believe that with his clout and SIGNIFICANT financial stake in the network they did NOT cancel him... HE stepped down to concentrate on other endeavors.

In a previous life, I was with a company that provided very high end transportation. Sometimes the demands were quite....unreasonable. Perhaps the same started to ring true on the set.

I often wish they would show some of those old Julia Child shows again. Some of them were hilarious. I also remember "Two Hot Tamales" and "Grillin and Chillin" as good stuff.

I don't know who any of these people are.

But I do live in KY and I once lived in WV.

    And I do eat food.

If you were taken there involuntarily by your parents, you may be eligible to apply for naturalization as an Appalachian American......:)
