There is no way to transfer content directly off of the DVRs. This is because of content licensing issues.

You could use something like a capture card to capture the video (real time) off of the DVR and record it on your computer, then encode it properly for use on the iPhone.

I think the only glimmer of hope you may have is if Sling Media gets off their butts and releases a version of their sling player for the iPhone. It has been demoed before and that can be seen here. The sling box pro hd was just released for pre-order last week.

That would still be streaming only though, so a solution for some, but not complete untethered mobility of copying video directly to the iphone.

Agreed, but the OP didn't really specify that they were looking for a completely untethered option... just that they wanted playback on the iPhone. I realize that they probably want copies on their iPhone, but as I said, sling media may be their only glimmer of hope since we can assume we'll never legally be able to pull recordings off the DVRs for playback on portable devices.

I ordered my slingbox pro HD last week in hopes of the sling player for iPhone being a future possibility.

Sadly you will probably never have that luxury. And getting into discussions about that sorta stuff can get threads locked pretty quickly around here. So... let's just assume you won't be able to do it. Sorry.

No iPhone here (yet, at least) but I have transferred several movies to my iPod using a capture card, capture software and iTunes. The resolution isn't maintained, but on that small screen it doesn't matter. All perfectly legal, since the transfer uses an analog output.

Here's a suggestion...

Get a hold of a ReplayTV 5000 series, use it to record your shows/programs.

Use DVArchive to access the recordings on the ReplayTV and transfer them to your PC or Mac.

If you're on a PC, use an appropriate conversion utility to convert the MPEG-2 file to an iPhone compatible format (MPEG-4).

If you're on a Mac, there are several ways (software and hardware) to do the conversion. Depending upon the speed of your Mac, the hardware way is to use El Gato's Turbo.264. If you've got a Mac Pro, you could use QuickTime, ffmpegX, or MPEG Streamclip.
