I am moving to a new city in a few weeks to start a new job, and would like to have DirecTV setup in my new apartment.

However, my wife will be staying behind at our current place to finish up things with her current job and would like to keep our current DirecTV setup until she moves.

Is is possible to have DirecTV install a dish at my new place (in a different city and state) and maintain my current setup at my current home for a month or two?

Are you under contract at your current location? It may be best (as hard as it is and depending on signal) to go OTA for those months, then do the movers connection when she's ready to move to the new city.

You would need a second account. Is the apartment temporary? Sometimes it can be difficult to even get DIRECTV at an apartment. As longrider mentioned, it might be a good idea to get a promotion through the local cable company in your apartment as there is usually no contract involved.

You can only use the Movers Connection once in a 12 month period, so if you will be moving to a larger place when the wife comes, it would be a good idea to use it then.

I'd use this as an opportunity to discover the new ways to watch TV. If you don't have Apple TV or a Ruko, I'd get one and use that in the new apartment until your wife can join you. The landscape is changing and the one thing I'll guarantee you is we won't watch TV the same way we do now in a dozen years, if not sooner. This situation could help give you insight as to what that new way will be.
