No stereo on 2nd TV? That's ridiculous. I might just have the old 501 activated after all...unless the user interface is outdated.

Both RF outputs on the 322 are monaural. On the 625 DVR, the TV2 output is MTS stereo.

I would suggest that you use a stereo modulator (<$20) to send the TV2 RCA outputs through the RG6.
