Currently I own an older model IPOD, and I soon will be upgrading to an IPOD touch.
Will Itunes let me use both IPODs, or will I be forced to use only one, and if I can use both, how does it work if you want different songs on the two?

You can use all your ipods & iphones (no matter what models) all at the same time in itunes.

You may wish to create playlists depending on the size of your library though if disk size is a factor on the model you choose.
